  • Latin name: Capparis spinosa
  • Danish names: Kapers
  • English names: Capers, caper bush, flinders rose

Capparis spinosa is the plant behind the well-known capers used in kitchens worldwide. The species originates from the Mediterranean region and the Middle East, where it grows in dry, sunny, and often stony environments – sometimes directly out of rock crevices and walls.

The plant is a low, wide-spreading shrub with long, slightly trailing shoots and small, round to oval leaves. It is particularly known for its spectacular flowers, which are white to pale pink with long, purple stamens that provide a light and exotic appearance.

It is the unopened flower buds that are harvested and pickled as capers. If the buds are allowed to develop, elongated fruits (caper berries) are formed, which can also be used culinarily.

Cultivation and requirements

Capparis spinosa thrives best in full sun and prefers:

  • very well-drained, preferably sandy or stony soil
  • sparse watering
  • dry and warm conditions

The plant is particularly well-suited for cultivation in cactus and succulent soil or other very well-drained soil that mimics its natural habitat. During the growing season, it can be supplemented with a mild, organic cactus fertilizer, but it generally manages well with limited nutrients.

Capparis spinosa is partially cold-tolerant, but in Denmark, it is best grown as a potted plant, where it can be overwintered in a bright and cool location. It does not tolerate long periods of hard frost, especially in combination with moisture.

The plant does not like having its roots disturbed, so it is an advantage to choose a suitable pot from the start.

Cultivation from seeds

Seeds of Capparis spinosa can be slow to germinate and often require patience. For best results, it is recommended to:

  • soak in lukewarm water for 24–48 hours
  • possibly perform a short cold stratification for 4–6 weeks
  • sow in a very well-drained soil mix
  • maintain a temperature of 20–25 °C
  • keep the soil slightly moist, but not wet

Germination can take from several weeks to months and is often irregular. Young plants grow slowly at first and gradually develop their characteristic growth habit.

Utility and collector's value

Capparis spinosa is a classic Mediterranean plant with great culinary value. Capers are an essential ingredient in many dishes and provide a characteristic salty and tangy flavor.

As a plant, it is also very decorative with its elegant flowers and relaxed growth habit. It is an obvious choice for those who want to grow edible plants with a Mediterranean touch in northern conditions.

Capparis spinosa is an obvious choice for the plant enthusiast who wants to grow a classic and unique herb entirely from seed – a robust species with flavor, history, and beautiful flowers.

Seed germination

Soak in lukewarm water for 24 hours. Then sow the seeds in moist seed compost or cactus soil, and place the pot in a greenhouse in early spring. They require this "stratification" to wake up. The small plants grow slowly and have rather delicate roots.

Childcare

Plant in a pot with well-draining potting soil (preferably mixed with a little sand).

- Place in full sun
- Can tolerate slight drying out
- Must be placed in a sheltered spot
- Fertilize during the growing season
