Sumac, also known as Rhus coriaria, is a remarkable plant known for its beautiful red seed heads and its culinary potential. Originally from the Mediterranean region and the Middle East, it is now a favorite among garden enthusiasts and chefs worldwide.
It is an evergreen shrub or small tree. When young, the bark is light green and covered in reddish hairs. The leaves are small and also hairy. Sumac blooms from May to July with small yellowish flowers that grow in dense clusters. The fruits are dark red to brownish, densely clustered, and covered in hair.
Unfortunately, it only tolerates very little frost (down to -5°C). It must therefore be grown in a pot that can be placed in a protected area or kept in the garden with some winter protection.
Use:
Use Sicilian sumac seeds to make your own sumac spice, a popular ingredient in many Middle Eastern dishes. Sprinkle it over hummus or use it as a marinade for meat to give your dishes an extraordinary depth of flavor.
